INGREDIENTS
  • ​2 cups paneer cut into 1" cubes
  • 3 potatoes boiled and cut into 1" cubes
  • 1 cup green peas pealed and boiled
  • 3 green chillies cut fine or as per taste
  • 1" piece ginger cut fine
  • 1/2 teaspoon pepper powder
  • 2 teaspoons aamchur powder
  • Juice of half lime or as per taste
  • 2 tbsp corriander leaves chopped fine
  • 1 tbsp oil
  • Salt as per taste
How to make Aloo Paneer Chaat
 
METHOD
  1. ​Heat oil in a non stick pan. Add green chillies and ginger and saute for a minute till translucent.
  2. Add paneer and fry for some time.  
  3. Add the boiled potatoes and boiled green peas and fry for some time.
  4. Add pepper powder and amchur powder and mix well.  
  5. Remove from gas. Squeeze lime and sprinkle salt and ensure it is mixed well.
  6. Garnish with coriander leaves.
  7. Tastes best when served hot.
  8. Can also be served with curd. Then add the coriander leaves after topping with curd.

How to make Aloo Paneer Chaat
Soya is high in protein and is said to control blood sugar levels, lower cholesterol and regulate the bowels. My son loves to eat soya due to its protein content. (He goes to gym everyday and is very particular about his calories & protein intake). Soya matar bhurji is a delicious way to eat soya and is very easy & quick to make. Soya matar bhurji is basically soya nuggets cooked with green peas and spices. 
Ingredients:

  • Soya Nuggets (soaked and drained) 1 cup
  • Green Peas 1 cup
  • Cooking Oil 4 tablespoon
  • Cumin seeds (jeera) 1 teaspoon
  • Ginger finely chopped 1/4 tablespoon (You can also use ginger paste)
  • Green chillies finely chopped 1-2
  • Onions finely chopped 2 medium
  • Garlic finely chopped /2 tablespoon
  • Green capsicum finely chopped 1 small (optional)
  • Tomato finely chopped 2-3
  • Red chilli powder 1/2 teaspoon
  • Coriander powder (dhania powder) 1/2 tablespoon
  • Turmeric powder 1/2 teaspoon
  • Cumin powder roasted (jeera powder) 1/2 teaspoon
  • Salt to taste
  • Fresh coriander sprigs finely chopped 5-6
  • Tomato flower (for garnishing)
  • Fresh red chilli flower (for garnishing)
  • Thin strips of ginger (for garnishing)

Method:
1. Heat cooking oil in a non-stick pan or kadai. Add jeera (cumin seeds) and when jeera begins to change color, then add garlic and saute for two minutes. Then add ginger, green chillies & finely chopped onions. Sauté till the onions turn translucent. Add chopped capsicum and tomatoes and mix well. Cook for 7-8 minutes.
2. In the pan, add red chilli powder, coriander powder, turmeric powder, cumin powder and salt according to taste. Mix well and cook for 2-3 minutes. Add soya nuggets and green peas in the pan and mix well. Cook it till the soya nuggets and green peas are done.
3. Add finely chopped coriander leaves to the pan and mix well. The bhurji is ready.
4. Transfer the bhurji into a serving dish. Garnish using a tomato flower, red chilli flower and ginger strips. Serve hot with roti or naan.
